My Chunky "Sofrito" Recipe

Sofrito in Puerto Rico is used as a base for cooking stew style foods.

Ingredients:

  • 2 bunches of fresh cilantro
  • 1/4 cup of minced garlic
  • 1 whole big white onion 
  • 5 leaves of recao/culantro/corriander
  • Peppers - Green/Red/Orange/Yellow


Procedures:

  1. Using a sharp knife chop all the ingredients as small as you can and mix them.
    • Storing it on a Mason Jar makes it last longer.
    • Must be refrigerated for conservation.
    • Some people add salt for conservation. 
    • You can always grind it on the food processor. I like it chunky!
